Popo hello, yes you can. I use various types of sensors: optical, inductive, PNP, NPN ... it all depends on your hardware.

What do the sensors speak?

dry contacts outputs?
Logic level output?
Analogue voltage or current output?

Once You determine what kind of outputs the sensors give You then the interrogation will be obvious.

I can't send the wiring because the project I am doing is a vending machine...the light sensor is to detect the drop down of the crackers

If the sensor provides a digital output when the the crackers drop then in Your ladder diagram You can place a contact in normal mode and assign it to an iput pin of Your microprocessor.
This way on cracker drop You will get a contact closure.
